Sunday: spaghetti & meatballs
Monday: pork chops, baked potatoes, fried corn (I saw this on Semi Homemade & have been dying to try it; here's the link if anyone else wants to try it

Tuesday: I'm working so hubby will be eating leftover spaghetti
Wednesday: something small & quick with no leftovers like sausage on pitas or fajitas
Thursday: turkey, mashed potatoes with gravy, stuffing, candied sweet potatoes, cranberry sauce, spinach or broccoli, green beans with red onions & vinaigrette. Cherry pie for dessert.
Friday: steaks with leftover side veggies

editing to add: So I made the fried corn, not on Monday but for Thanksgiving. It went over very well but I think it was a little too rich even for a special occasion. The recipe calls for 4 tablespoons of butter & 3 tablespoons of sweetener. I only used 2 tablespoons of sweetener but the full amount of butter. Nothing seemed off with the missing sweetener but I plan to reduce the butter by 1 tablespoon as well in the future.
The fried corn sounds pretty interesting! Have a great Thanksgiving.

ReplyDeleteI used 1 less teaspoon of sugar than the recipe called for & next time I make it I plan to reduce the butter by a tablespoon; it was just a little too rich tasting.
