I was reading a message board (which unfortunately is closed to new membership -sniffle-) & one of the recent conversations was about how to add more fruits & veggies to your meals as well as what types of each. Most people had the same ideas & I felt like sharing mine so I'm doing it here.
I try to buy as much fresh & in season as I can. I usually buy extra & freeze some. My second choice is frozen, third is canned. We don't eat breakfast together too often but when we do I will throw some berries or peaches on the plate as a side dish. For lunch it depends on what we're eating. If it's sandwiches we'll have lettuce & tomato with some kind of fruit or veggie on the side. If it's leftovers usually we have some leftover veggies too. Dinner is the easiest because we eat dinner together 99% of the time. I try to make 2 veggies, or 1 veggie & a salad. Some nights I add a fruit as well.
My salads are variations of iceberg, romaine, baby spinach, green leaf, shredded carrots, red onions, tomatoes, cucumbers, feta cheese, chopped hard boiled egg...depending on what we have.
Fruits I try to compliment the food; pork with apples or applesauce, tropical fruits with chicken & Mexican. This is pretty much the only way I get hubby to eat his fruit.
Veggies we pretty much eat anything except brussels sprouts, neither of us like them.
I eat fruit for snacks - apples, oranges, bananas.

  1. Funny you should ask - the corn muffins on the side of the goulash were fresh blueberry corn muffins. I add fruit and veges anywhere and everywhere I can, but we also eat a lot of salads and fresh fruits for lunch and snacks. Being pregnant is a great time to start getting more fruits and vegetables - eating right always helped with my morning sickness and indigestion!
