Menu plan Monday for the week of September 19th

I make a large salad once or twice a week & leave it plain in the fridge so it's always ready to eat. What we ate last week:
Sunday - shrimp scampi & spaghetti
Monday - sausage with peppers & onions, tater tots
Tuesday - chicken enchiladas, rice & beans
Wednesday -  teriyki roast pork, fried rice, mixed veggies
Thursday - leftovers? Hubby wasn't home
Friday - taco salad, rice, beans
Saturday - chicken, stuffing, peas
